A Little Bit About Me *
Well, hello there! I’m Rosmirtha Sparkle, and this is my kitchen - a place of learning, laughing, invention (which usually leads to laughing), and comfort. This site and all of its nifty recipe videos is intended for anyone who is looking to make fresh eating an everyday part of their life. So whether you are new to the kitchen, or need to rework your current repertoir due to a health situation, my goal is to make this a safe and positive space to learn about and explore foods, adapt existing recipes, and to be a part of a supportive community.
You will notice that many of the recipes (but not all of them) will have the Potassium (K+), Phosphorous, and Protien count listed at the bottom of the recipe. Several will also have a food group listing. This is because I am striving to help make the CKD, DASH and Cardio diets - and maybe the Diabetic’s Diet - easier to adjust to. Why? I am a person living with CKD and when I was diagnosed, I was given very little information on what to eat. That was so very frustrating and when the Internet Oracle was consulted, all I found was a whole lotta conflicting information.
I made a vow that nobody needs to live in that state of confusion, worry, and frustration because I have done it on your behalf…and am still on my weight loss, CKD, and Hypertension journey which started on March 17, 2025 - one year ago today! By following what is basically the DASH diet, I have lost 56 pounds, lowered my CKD level from 3B to 2, and taken my blood pressure, A1C levels, and Cholesterol levels into the safe zones.
I’m neither a Doctor, nor a Dietician - so there is NO medical advice or undocumented dietary advice given on this page, but I do I have years in professional kitchens behind me and I have a host of severe food alergies which includes alergies to foods high in K+ and Iodine. I have had to weigh and measure my food for over 35 years, so it is second nature to me to eat - AND COOK - with a restricted diet. And if there is a PhD in label reading, why do I not have one? In short, I’m sort of an insufferable food know-it-all.
Other than having CKD and enjoying the whole eating scene, I am a wife, a mother, and an avid table-top role playing gamer. I listen to music 24/7 with no particular favorite genre (I love them all), and am very proudly owned by 6 cats and a dog. Hopefully, the pet pics have successfully loaded to this page!
I look forward to not only sharing my recipes, but sharing yours too! There is so much cooking and eating to do and there are SO MANY wonderful foods from around the globe to experience! Let’s do this!
